There's nothing like a hearty hot bowl of soup to warm up with, for when you are sick as a dog or for whenever the need of a grilled cheese to do a slam-dunk into a luscious bowl of tomato soup, DONT go for the canned stuff! Make it from scratch! This is such a low budget soup that everyone can make and the best part is that YOU are in charge of how much seasoning you want!
I wrote this with a vegan approach because quite often, this keeps the soup extremely light and it still holds amazing flavor! Make it vegetarian with a parmesan rind in the soup base. Shake some freshly grated parmesan in your bowl! Add some freshly cooked pasta for a tomato-mac attack! Or even consider bulking this up with your choice of meats, vegetables and rice for a full complete meal!

INGREDIENTS: 1 to 1 1/2lb Tomatoes, washed, cut into chunks or slices 8oz Onions, sliced 3oz Garlic, sliced 1/4 Cup Olive Oil Kosher Salt Black pepper
Vegetable Stock - optional if you want a thinner soup
Heat oven to 425°F/218°C In a roasting pan, add all of your ingredients and toss to coat.
Timer set for 30 minutes Once done, toss and put back in the oven for another 15 minutes.
Remove pan from the oven and allow to cool.
In a high-powered blender or a bowl with an immersion sick, puree your roasted vegetables down. It is up to you if you want to puree completely or not.
If you want a smoother soup, run the soup through a fine-mesh strainer over a bowl and with a whisk, work the soup base through. Discard the solids. If you want a thinner soup, just add some vegetable stock to your liking. In a pot or pan on low/low-medium heat, bring your soup up to temperature slowly. Make sure to taste test this and add more seasonings to your own personal preference. Taste-test as you go until you reach the desired flavors.
This is the perfect soup for dunking grilled cheese sandwiches. Add some cooked pasta for a tomato-mac fix! Even adding meats, cooked vegetables and cooked rice will definitely make this a hearty meal in a bowl!
