Hummus

This is an absolute favorite of mine that I enjoy making at home. Whether a snack or part of a meal or even a meatless option, you just cant deny the hearty flavor of hummus! A favorite blend would be a spicy pepper for me while my daughter loves a hummus filled with shredded vegetables for a more complete meal to a slice of toasted bagel.

There is more work involved with using your own soaked chickpeas but for those who purchase organic in-a-can, it will still work. And, yes - you can make this without the tahini if you are not a fan of it - the flavor is not for everyone so make it the way you like! This will make about 6-8 servings.


INGREDIENTS:

2lbs chickpeas, soaked/drained and rinsed

1/3 C Tahini

1 lemon – juiced

2 cloves garlic – (adjust to individual liking)

Salt/black pepper to taste

1/4 C Good quality olive oil (Greek, Turkish, etc.) to start


In a high powered food processor -

Add all of your ingredients except the olive oil – puree


Drizzle some olive oil into the mixer while pureeing down… go with a quarter cup drizzling to start. Determine how much of a texture you want. Taste test this to see if you want more tahini, lemon, salt and/or pepper.


If you want more smoother consistence, balance the additions of tahini, lemon juice and olive oil. You will want to taste test to adjust your s&p. Serve in a lovely serving dish and drizzle a little olive oil on top, dust with your favorite warming spices. Serve with pita, fresh vegetables, bagels, etc…


OPTIONS:

For flavored hummus, add some chili flakes for some heat.

Roasted red pepper

Extra garlic

Whatever you fancy!


You can either make this smooth and silky or textured for spreading on breads.
