Blackberry Bruschetta Mix

North Country Smokehouse has an incredible "Tomato Basil Chicken" sausage available that when you slice into it, you can smell the fragrance of tomato. When this was taste-tested, it had an incredible flavor, especially if you taste the edges with a little bit of browning. So, in creating this bruschetta mix, I am using a local made blackberry sauce instead of the traditional balsamic vinegar and tomato paste. What we end up with is the most incredible flatbread experience for those who enjoy a classic bruschetta but made into a delicious meal with chicken sausage!


This will be the condiment we use in a separate recipe for the Tomato Basil Chicken Sausage Bruschetta dish! Great for a couple meals, easy to slice up for appetizers, and can definitely be a versatile way of using leftover vegetables as well! This really brought forth a beautiful flavor and one that really fooled my palate. This tasted incredible and pairing fruits and cheese together really made this a successful creation.

A digital scale is needed for the bruschetta base.

INGREDIENTS: 8 oz-10 oz Roma tomatoes, sliced into strips 1/4 lb Red Onion, finely diced 2-3 oz Big Dog Sauce Company's Blackberry Sauce 2-3 TB White Wine vinegar 1/2 oz Garlic, finely minced

Kosher salt and black pepper, to taste 10-12 Basil leaves, chiffonade


Prep all of your ingredients into one bowl. Make sure you mix this well as you want the onions to fully marinate in the mixture. Refrigerate for at least an hour or overnight for best results.

RECOMMENDATIONS: North Country Smoke House Vermont cheddar sausage, jalapeno cheddar sausage, kielbasa, whiskey fennel sausage, and sugar-free rope sausage, all smoked bacon, ham steak, black forest deli ham, Candian bacon, and breakfast meats. This also works great with poultry, pork, seafood, on rice, with eggs, and with either fresh bread or garlic bread.
